Shahi tukray: Ghee-infused Shahi Delight

Ingredients with Quantity:

  1. 1 liter Milk (Doodh)
  2. 3-4 tbs Sugar or to taste (Cheeni)
  3. ½ tsp Green Cardamom Powder (Hari Elaichi Powder)
  4. 1-2 pinch Saffron Strands(Zaffran)
  5. ¾ cup creame
  6. ½ cup Water (Pani)
  7. ½ cup Sugar (Cheeni)
  8. ½ tsp Green Cardamom Powder (Hari Elaichi Powder)
  9. ¼ tsp Rose Water (Araq-e-ghulab)
  10. 6-8 slices of Bread
  11. 3-4 cup Oil
  12. 1 tbs Desiccated Coconut (Khopra)
  13. 2-4 tbs Chopped Almonds (Badam)
  14. 2-3 tbs Chopped Pistachio (Pista)

Preparation of Shahi tukray: Ghee-infused Shahi Delight

Thickened milk (Rabri):

  1. Add milk into the saucepan and heat it on high flame.
  2. Then add sugar into the milk and mix it.  If you don’t like sugar you can also use condense milk instead of sugar. Or you can use both with little quantities.
  3. Then add green cardamom powder and mix well.
  4. Now add saffron into the mixtue and cook on low flame for 20-30 minutes until milk thickness. Keep stirring the milk in between until it reduced to our desired thickness.
  5. Then add cream into the mixture and give it a good mix.
  6. Remove the thickened milk or Rabri from heat and set aside.

Sugar syrup:

  1. In another saucepan add water and sugar, and cook them until they make one string consistency.
  2. After that add cardamom powder and mix it well. And cook until the sugar mixture thickened.
  3. Add rose water and mix it well, then cook the sugar syrup for 1-2 minutes.
  4. Remove from flame and set aside. Convert this sugar syrup into any deep tray.

  1. Remove the crust from the bread slices and cut the slices in triangle shape or desired shapes.
  2. Take a deep fry pan and add oil in it and heat it up on medium flame. Fry the bread slices from both sides in the hot oil until they turn golden brown.
  3. Drain out the fried slices on a plate line with paper towels.
  4. If you don’t like fried bread slices you can toast them until crispy.


  1. First dip the fried bread slice into the sugar syrup for 15-20 seconds.
  2. Then arrange those sugar syrup coated bread slices in the serving dish according to your choice, then pour all the thickened milk or rabri on the arranged sugar syrup coated bread slices.
  3. Allow the yummiest Shahi tukray: Ghee-infused Shahi Delight to cool for 10-15 minutes.
  4. Then place the prepared recipe into the refrigerator for at least 2 hours to allow the flavors to meld together and for the bread to absorb the sweet milk mixture.


At the end garnish the Shahi tukray: Ghee-infused Shahi Delight with desiccated coconut, almonds and pistachios.


Take out this delicious and easy cocked shahi tukray from the refrigerator after 2 hours.
