Ingredients with Quantity:
- 16 Trotters (Paye)
- 1 large whole Onion (Pyaz)
- 3 whole Garlic (Lehsan)
- 2 inch Ginger (Sabut Adrak)
- 1 tsp Black pepper (Sabut Kali mirch)
- 3-4 Cinnamon (Dar chini)
- 5 Green Cardamom (Hari Elaichi)
- ½ Mace Rai (Javatri)
- 8 clove (Laung)
- 1 tsp Whole dried Corrainder (Sabut Dhania)
- 1 tbs Cumin (Zeera)
- 2 Black Cardamom(Bari elaichi)
- 1 tsp oil
- 2 tbs Salt or to taste
- 3 tsp Dry fried onion
- 3 liter Water (if using pressure) or 5 liter (in other pot)
- 1 & ½ cup oil or to taste
- 1 small Onion (Make paste)
- 1 tbs Ginger garlic paste (Lehsan adrak paste)
- 1 tsp Red chili powder (Lal mirch powder)
- 1 tsp Cumin powder (Zeera powder)
- 1 tsp Garam masala powder
- ½ tsp Kashmiri lal mirch
- 1 cup Yogurt (Daahi)
- ½ tbs Whole spice powder
- Fresh chopped coriander (Hara dhania) (for garnishing)
- Chopped green chilies (Hari Mirch) (for garnishing)
- Ginger julienne (Adrak) (for garnishing)
- Lemon wedges
Preparation of Riwayati Mutton Paye: A Traditional Pakistani Dish for Meat Lovers
- Take trotters and wash them thoroughly remove all the impurities.
- Then take a large onion and peel it, a piece of ginger and peel it too & set aside.
- Then take pressure cooker and add washed trotters and other ingredients like onion, ginger, garlic, black pepper, cinnamon, green cardamom, black cardamom, cloves, dried coriander (whole), cumin, mace rai, salt, oil, fried onion (dry) and water.
- Place the pressure cooker on medium flame for 30-35 minutes. Note the time after pressure starts.
- If you are not using pressure cooker, then add 5 liter water and place the pot on medium flame for at least 2 hours or until trotters tender.
- When the trotters cooked thoroughly, take out the trotters from soup (yakhni) and set aside. And pour the soup (yakhni) in a bowl with the help of strainer and discard the material.
- Take a pot, add soup (yakhni) and tender trotters in it, and place the pot on low flame.
- Take a frying pan, add oil and let it heat on medium flame. When the oil is warm add onion paste and after 1 minute add ginger garlic paste and cook until light brown.
- Then and add red chili powder, cumin powder, garam masala powder, Kashmiri lal mirch and cook for 2 minutes.
- Turn the flame low and add beaten yogurt and cook on low medium flame for 5 minutes or until oil come on upper surface.
- Then add this tarka into the cooked trotters and mix well. Cover the pot and place on very low flame for 6-7 minutes.
- The mutton paye is ready.
Garnishing
Dish out the mutton paye into the serving dish ang garnish it with fresh chopped coriander, chopped green chilies, ginger julienne and lemon wedges.
